Edinburgh Food Studio

Type: Commercial - Remodel

We were delighted to assist Ben & Sashana in the design of their Edinburgh Food Studio in 2015. The studio is a restaurant and research hub that specialises in quality ingredients and 'proper' cooking.

Process

Built in the mid-nineteenth century, the original dovecote included five arched pigeon holes to the south. As a listed building, these features were repaired and modified to create unique light tunnels that enhance the space during the day and illuminate the gable at night.

An open-tread, spiral stair leads to the gallery level, minimising the impact on light and space in the dining area below.

Working with the existing building, extensive repair and maintenance was carried out during the works to ensure the longevity of the structure.

The existing pantile roof was insulated and modified with new Velux windows to flood the room with light. Exposed timber collars increase the volume of the space and help create a cosy, barn-like feel.
